I’m a vegetarian now but “Rocky Mountain Oysters” are considered a delicacy (or test of will to eat) in the U.S., too, it’s not like it’s that weird. You’re certainly right, the ones the Serbs are cooking up sound well and tender. The “Rocky Mountain Oysters” I had were deep fried, as is Amerikan tradition, and that almost certainly impacted my enjoyment of em.
Tangent: presenting this as “disturbing” is just food colonizer bullshit, it’s only as disturbing as all meat eating could arguably be seen as. People eat food! I am sure that I am looked down on by yuppies and suburbanites for having had to resort to frog legs, squirrel and opossum in my youth, and I’m a white Amerikan. i wouldn’t mind giving them a try. I remember having some trouble with intestine due to the texture but I think I could get used to it if I had the chance to experiment with cooking it myself.
I think it’s better to use all the parts of the animal. probably skip eating the brain because of prions, but besides that it’s more respectful of their sacrifice to use as much of it as you can.

lots of organ meats can be tough, so there’s probably some way to prepare it so that it tastes good but it’s not what you’d think at first.
