Here’s a couple book recommendations. I have not personally read them myself yet, but I’ve heard particularly good things about the “The Ethnic Cleansing of Palestine.”

I have heard “Gaza: An Inquest Into Its Martyrdom” by Norman Finkelstein is good. Haven’t read it though.

“The Arabs - A History” by Eugene Rogan is a good and comprehensive introduction to the history of the arab peoples. This goes way beyond just palestine, but that’s also necessary to get the full overview of the messed up politics that lead to the problems that still plague the area.

I have this audiobook downloaded but havent read it yet: Khalidi - the hundred years war on Palestine.
