is it a pesto? not qualified to say but it rocks
throw:
- a bunch of cilantro, like a whole bundle minus the last couple inches of stem
- about 1/3 of a cup roasted unsalted pistachios
- the juice of at least half a lime
- one full jalapeno pepper minus the seeds and such
- a few cloves of garlic
- a tablespoon or so avocado oil (or other oil in a pinch)
- you may need to add a little water to thin it out
- salt to taste
into a food processor or whatever you have that can pulverize things. no nice cutting of stuff required, just throw em all in there. vegan and great on everything. in my house this is basically the stuff from the stuff
I wish cilantro didn’t taste soapy to me, seems like people who like it really think it slaps.
Parsley is less soapy but not in a way I don’t like, and in a pasta sauce (like in pasta aglio i olio) it’s fine.
Parmesan and pine nuts are expensive, so even if you’re not vegan this recipe makes sense. Although usually I go with walnuts in my pesto because it’s cheaper. Never really occurred to me to use a different herb.
I’m sure it would also rock with basil.
I meant different herb than basil, since i usually do the traditional green pesto.
Not sure what other herbs would rock, but basil is my favourite fresh herb even though my plant always dies. Maybe it’s a soil thing, but i know someone with a giant basil plant that they leave outside and don’t water and it’s fine and I’m extremely jealous.
Marjoram would probably be pretty sick, but I’ve never seen it not-dried
Try dandelion leaves. I wouldn’t compare the taste, but I feel it’s profile(although different) works in similar ways.
This is pretty similar to chimichurri although the pistachios will make for a thicker sauce with a texture like pesto. Sounds absolutely delicious.
I make a very similar pesto with roasted almonds and no lime juice that’s delicious, so I’ll have to give this a try.
