        Thanks, it’s red beans simmered with potatoes, carrots, celery and bell pepper with seasonings. The bulgur is plain with a scoop of hot Armenian red pepper paste

      Do me a favor and please read the sidebar for this community. I’m not a bot or food blogger and I think it isn’t very cool for you to just demand a recipe from me with a single word. I don’t use recipes. It’s beans cooked with spices and vegetables.

    I feel like I could really up my food and eating enjoyment game if I cut up my potatoes to the same size as the beans. It would be more harmonious? IDK. Looks amazing as always.

    As a non-vegan, can I ask you a question? I’ve attempted vegan cooking, and it weirds me out to have a meal like this of carbs on carbs with a side of carbs. Is there a strategy to mix it up, or do you get used to it?

      All natural whole plant foods include all macro nutrients and the way you understand food is simply not real and created by the food industry to sell you processed food. Beans aren’t a carb or a protein, they are a bean.

      In defense of food is a decent book by Michael Pollen although I vehemently disagree about animal food products. Dr. Greger at nutritionfacts.org has a lot of good information about the whole food plant based diet. I have been eating this way for 8 years into my forties and am extremely healthy and active.
