Good morning folks, simple question for you. What sorts of egg alternatives exist out there? I’m specifically looking for something that I can make an omelette-like type of food with. Something that replicates the egg taste and texture as closely as possible.

I’ve been trying really hard to stick to fully plant based diet. Haven’t had any dairy in weeks or eggs in months. Years since I last ate meat. But lately I’ve been having weird cravings for omelettes because I used to eat one for breakfast every morning.

    • Piggie backing off this. OP, the black salt mentioned above is Indian in origin. It has the flavor of eggs and then some! I use it in yogurt sauces for fried quinoa cakes. When you find your favorite egg like texture, add this stuff to it and you’ll swear you’re eating eggs.

    What about a crepe (died yellow with turmeric) filled with a tofu scramble and a white sauce?

    For the white sauce, you could do cashew milk, oil, flower for the start and then add wheat gluten and nutritional yeast.

    That way you get the solid outside gushy inside of am egg omelet

    To add to the chickpea praise, I have done a mix of half soft tofu, half chickpea flour, and some cornstarch to thicken and then treat it like you would eggs seasoning wise. Made it before for a friend (not vegan myself) and they really enjoyed it. Hope you do as well!

    JustEgg is great for omelettes. I also use it to make egg sandwiches with some vegan cheddar. It already approximates the egg flavor and texture out of the container. It’s relatively expensive though, and your local grocery may not carry it.

    I always see Kala Namak suggested on the Internet, but I’ve never seen it in the grocery. If you have an Indian grocer near you, they might carry it, otherwise you’ll likely need to order online. I used to try to approximate scrambled eggs with tofu, but I ended up liking the tofu scramble (without Kala Namak) so much that I haven’t had a craving for anything resembling scrambled eggs.

    I also used to do deviled potatoes with JustMayo and steamed baby potatoes. My local grocery stopped carrying JustMayo, so I stopped making them 🤷‍♀️

      My wife & kid go through about a large jar of Vegenaise a week. It’s gotten expensive so I tried making mayo using soy milk and it’s just as good and very easy with an immersion blender. Several similar recipes online but I always omit any garlic etc.

    I made this vegan burger patty once using tofu and it was a massive failure as a burger but it was the perfect substitute for scrambled eggs. I lost the recipe and it has been bothering me for years, so if anyone finds a recipe for a vegan burger that is actually vegan scrambled eggs… Lmk.
