Peaches were looking good at the market so I threw this together.

Ingredients

  • 125 grams ricotta
  • 1/2 peach
  • 1 teaspoon honey
  • 100 grams buffalo mozzarella
  • 1 tbs crushed pistachios
  • 1 tsp olive oil
  • 245 gram Napoli dough ball

Steps

  • Begin by pressing out your crust on a flat surface.
  • Lightly coat the crust with a drizzle of olive oil.
  • Spread the ricotta cheese evenly over the crust.
  • Drizzle the honey on top of the ricotta cheese.
  • Next, add the sliced peaches on top of the ricotta and honey.
  • Distribute the buffalo mozzarella evenly across the pizza.
  • Preheat your oven to its highest temperature, and put your pizza in to bake on a pizza stone (my oven gets to about 250C)
  • When there are about one or two minutes of baking time left, sprinkle the crushed pistachios over the pizza and return to oven.
  • Finally, remove the pizza from the oven and let it rest for a minute or two before you start slicing and serving it. Don’t forget to garnish with fresh basil leaves!
