This is a relatively simple bean dish I made. I prepared pinto beans and brown rice, added them to a pan with red pepper, tomato paste, ground cumin, oregano, paprika, salt and pepper and cooked it using a bit of water and vegetable stock (I used homemade.)

we have a name for that in 🇧🇷 , its called baião, pretty popular in the northeast region.
In some places it’s just called Arroz e Feijão (rice and beans) though.
when separate. when cooked together it’s baião.

What are your main vegan go-to meals when you don’t have much time? I need some more ideas.
I’m currently studying at university so I understand not wanting to/not being able to put in the time to cook long. I am currently on break so I have more time lol.
Usually during semesters I have tofu with steamed vegetables or wholewheat pasta with some other topping, usually vegetables, sauce, TVP, and/or nooch. This sounds weird coming from a vegan but I’m not the biggest tofu fan so I don’t use it much, when I do I normally bake it since I don’t cook with oil. Usually takes 20 minutes overall for the tofu and veg and maybe 15 for the pasta.
Looks like there’s some carrot in there too. The rice and beans I’m used to are made with kidney beans and (sometimes) coconut milk, then the rice gets a red/purple tint.
It is actually pepper lol. Never had coconut in rice and beans tho might have to try that.
I never had pepper. I guess that adds a bit more nutrition.
When I went to Costa Rica rice and beans was the prime staple, they had every variation of it that you could imagine.
